📖 KEY DEFINITION Hospitality Studies has only ONE paper. The whole subject is examined in one 200-mark paper over 3 hours (180 minutes), split into four sections (A to D) built from six questions (1 to 6). Every question is compulsory - there is no choice anywhere in this paper. This revision guide is built around what the real exam tests most often, not every fact the CAPS curriculum could examine.

🔥 FREQUENTLY TESTED Section A's shape barely changes sitting to sitting: multiple-choice items, match-the-column picture or term pairs, one-word or single-term answers, and straight selection or identification items, drawing from all six topics inside one 40-mark question. Because the topics are deliberately mixed together here, no topic is ever safe to skip entirely - even a topic that carries few marks elsewhere in the paper can still cost you a Section A mark.
⚠️ COMMON MISTAKE Not every sitting matches the table above. June assessments have repeatedly reshuffled the paper closer to 40/15/110/35: Section B narrows down to hygiene, safety and security content only (kitchen and restaurant operations content all but disappears), Section C swells past its usual 80-mark ceiling to around 110 (both Q3 and Q4 run heavier than 40 marks each), and Section D drops Sectors and Careers completely - Q5 becomes pure food and beverage service content instead, since Sectors and Careers is only taught later in the year. Prelim and Final sittings match the official 40/20/80/60 layout exactly. Build your revision around the official structure above, but don't be thrown if a June paper in front of you looks different - it is a real, recurring pattern for that sitting, not an error in your paper.

⭐ EXAM FAVOURITE Prioritise Nutrition/Menu Planning, Food Commodities and Food and Beverage Service. Together they carry well over half the paper's marks, and every one of their signature question shapes - the costing calculation, the choux pastry process, the wine label and service question - has shown up in every one of the seven real sessions this analysis is based on. Hygiene's disease scenario earns fewer marks but is the single most reliable question in the whole exam, appearing without exception every year, so never leave it for last. Sectors and Careers is worth real marks in Prelim and Final sittings but disappears from June papers, so weight your revision time to the assessment actually ahead of you.

Exam day's biggest mark savers

⚡ MUST MEMORISE
  • Show every calculation in the costing question - state the formula first, then the working - for selling price, cost per person, food cost percentage and deposit/balance owing.
  • The disease scenario: know symptoms, incubation period, transmission route and prevention for hepatitis A, gastroenteritis, cholera, TB and HIV/AIDS cold - one of these appears every single sitting.
  • Choux pastry: a cooked, egg-enriched paste that rises through steam, not a chemical raising agent - know the step order, what goes wrong if a step is skipped, and the named product family (profiteroles, éclairs, croquembouche, Paris Brest, gougères, French crullers, beignets).
  • Gelatine's three phases, in order: hydration, then dispersion, then gelation - and never raw pineapple in a gelatine dessert, its enzymes stop the set.
  • Do-not-confuse pairs: gross profit vs nett profit; pasteurisation vs sterilisation; silver service vs plated service; larding vs barding; on-consumption vs off-consumption.
  • Action-verb discipline: "evaluate/judge/assess" always opens with a one-mark verdict before motivating; "tabulate" answers that aren't in table format score zero, however good the content.

A recipe only earns its marks when you can defend every step, not just name it.- write like the marker is asking why, not just what

ONE-MINUTE SUMMARY

One 200-mark, 3-hour paper, four sections (A 40, B 20, C 80, D 60) built from six compulsory questions. Nutrition/Menu Planning, Food Commodities and Food and Beverage Service anchor over half the paper and their signature questions repeat every year; Hygiene's disease scenario is the single most reliable question of all despite its small mark share. Middle-order marks (50%) dominate, so expect a scenario, menu, label or picture attached to nearly every long question. Watch for June sittings narrowing Section B to hygiene only and dropping Sectors and Careers altogether.

  • Where: the whole paper; this overview sets the priority order for every topic section that follows.
  • What earns marks: showing every calculation step, opening evaluate/judge answers with a one-mark verdict, tabulating whenever the verb says so, and never skipping the hygiene disease scenario.
  • Smart move: check which sitting you are facing before you finalise your revision plan - a June paper needs less Sectors and Careers and a heavier Section C, while a Prelim or Final needs the full 40/20/80/60 spread.
